Kata Pengantar

Kehidupan manusia semakin berkembang seiring adanya bioteknologi melalui makalah inni, kami dari kelompok 8 ingin menjelaskan sacara sederhana tentang proses pembuatan tape khususnya bagi generasi muda. Makalah ini membantu untuk lebih jauh mengatahui tentang proses pembuatan tape singkong

Bagai pepatah mengatakan “tak ada gading yg tak retak” demikian pula dengan makalah ini tentu banyak kekurangan, karena itu kepada para pembaca dan khususnya guru mata pelajaran ini mohon untuk memberikan kritik agar wawasan kami bertambah baik. Semoga makalah ini bermanfaat

BAB I

PENDAHULUAN

1.1   latar Belakang masalah

tape merupakan makanan fermentasi tradisional yang sudah tidak asing lagi bagi kita. Pembuatan tape ini, melibatkan banyak mikroorganisme. Mikroorganisme yang terdapat di dalam ragi tape adalah kapang amylomyces rouxil,mucor sp, dan rhizopus sp., khamir saccharomyces cerevisiae, dan candida utiris; serta bakteri pediococcus sp. Dan baciluss sp. Kedua kelompok mikroorganisme tersebut bekerja sama dalam menghasilkan taape.

1.2   Rumusan Masalah

a)      Apakah proses fermentasi itu?

b)      Bagaimana proses fermentasi pada tape?

c)       Ada berapa macam langkah-langkah dalam proses pembuatan tape singkong

1.3   Tujuan

Tujuan penelitian karya ilmiah ini adalah :

a)      Mendeskripsikan pengertian fermentasi makanan tape

b)      Mendeskripsikan langkah proses pembuatan tape singkong

c)       Menjelaskan tujuan fermentasi makanan

d)      Menyebutkan nama jamur yang menyebabkan fermentasi pada tape singkong

1.4   Manfaat dalam mengetahui bagaiman proses fermentasi tape singkong

a)      Dapat berguna bagi masyarakat umum dan generasi muda khususnya pelajar

b)      Berguna untuk mengembangkan proses fermentasi makanan, khususnya yang terjadi pada tapes ingkong dengan baik dan benar

BAB II

LANDASAN TEORI

2.1   Pengertian Fermentasi

Fermentasi adalah proses produksi energy dalam sel dalam keadaan anaerobic (tanpa oksigen).

Gula adalah bahaan yang umumnya dalam fermentasi, beberapa contoh hasil fermentasi adalah etanol, asam laktat, dan hydrogen. Beberapa komponen lain jugaa dapat dihasilkan dari fermentasi seperti asam butiran dan aseson.

Ragi dikenal sebagai bahan yang umumnya digunakan dlam fermentasi untuk menghasilkan alcohol dalam air, anggur dan minuman beralkohol lainnya.

METODE PENELITIAN

3.1 Objek Penelitian

Penghasil atau pembuatan tape singkong di desa Karangtalok

3.2   Variabel

a)      Variabel Bebas  :Penggunaan dan kualitas ragi

b)      Variable terikat : Singkong

3.3   Metode Pengumpulan Data

Pada karya ilmiah ini menggunakan metode pengamatan dan wawancara

Karya ilmiah ini dibuat dengan metode pustaka dan metode pengamatan

BAB IV

HASIL DAN PEMBAHASAN

4.1   Hasil Penelitian

Reaksi dalam fermentasi berbeda beda tergantung pada jenis gula yang digunakan dan produk yang dihasilkan secara singkat, glukosa(C6H12O6) yang merupakan gula paling sederhana, melalui fermentasi akan menghasilkan etanol (2C2H5OH).

Reaksi fermentasi ini dilakukan oleh ragi dan digunakan pada produksi makanan.

Persamaan reaksi kimia

C6H12O6 2C2H5OH + 2CO2 + 2 ATP (energy yang dilepaskan : 118 Kj/Mol).

Gula (glukosa, fruktosa, atau sukrosa) alcohol (etanol) + karbon dioksida + energy (ATP)

Jalur biokimia yang terjadi, sebenarnya berariasi tergantung jenis gula yang terlibat, tetapi umumnya melibatkan jalur glukosa, yang merupakan bagian dari tahap awal respirasi aerobic pada sebagaian besar organism. Jalur terakhir akan bervariasi tergantung produk akhir yang dihasilkan.

4.2   Pembahasan

1. cara membuat tape singkong :

a)      Alat

• Pisau
• Panic
• Plastic
• Ember

b)      Bahan

• 1,5 Kg singkong, kupas, cuci bersih, ptong sesuai selera
• 1,8 butir ragi tape, hasulkan
• Daun pisang (untuk alas)

1. Cara Pembuatan

a)      Kukus singkong hingga matang, usahakan tidak terlalu matang agar tidak benyek

b)      Setelah dingin, tata singkong dalam wadah bertutup yang telah dialasi daun pisang, dengan wadah steril agar tidak ada bakteri yang menghambat proses fermentasi

c)       Taburi dengan ragi tape hingga rata

d)      Tutup kembali dengan daun pisang lalu tutup dengan tutup wadahnya. Diamkan di tempat hangat selama 3-4 hari.

PENUTUP

5.1   Kesimpulan

Pembuatan tape aadalah proses fermentaasi yang menghasilkan senyawa senyawa yang sangat berguna, mulai dari makanan sampai obat obatan. Proses fermentasi pada makanan  yang sering dilakukan adalah proses pembuatan tape, tempe, yoghurt, dan tahu. Fermentasi diperkirakan menjadi cara untuk menghasilkan energy pada organism purba sebelumnya oksigen beada pada konsentarsi tinggi di atmosfer seperti saat ini, sehingga fermentasi merupakan bentuk purbaa dari produksi energy sel.

Produk fermentasi mengandung energy kimia yang tidak teroksidasi penuh tetapi tidak dapat mengalami metabolism lebih jauh tanpa oksigen atau akseptor lainnya sehingga cenderung dianggap produk sampah

NYAI INTAN       : Hello audiences, Let’s me introduce my self, my name is NYAI INTAN. I am the mother’s Klenting.

                              They are klenting Abang and Klenting Ijo.   Okay, audiences , I have to go now to cook

                              first  because My children haven’t breakfast yet, bye……..bye……

KEMUDIAN nyai intan  KELUAR PANGGUNG. TERDENGAR MUSIK BERIRAMA KERAS, MENGIRINGI MASUKNYA PARA KLENTING. KEMUDIAN MEREKA MEMPERKENALKAN DIRI.

K.ABANG             :  Assalamualaikum ….. hey  audiences….. introduce….. we are Klentings, Nyai Intan’s daughter.

                                My name is Klenting Abang. I am the oldest…..here!

K.IJO                      : My name is Klenting Ijo.

K.ABANG             : Audiences, We love Mom, Nyai Intan very much. Because My Mom,  gives us freedom. It means that our

                               mom believe us, is it right my sister?

K.IJO                      : It’s right audiences, We are still young. So we have to use well.  Live only once don’t  be waste of time

K.KUNING           : Ma’am….. I am a rambler, I have no parents and a house….. I am a lonely, so help me ma’am, I want be

NYAI INTAN       : Please…..? what does  her mean, Klenting Abang and Klenting Ijo?

                (NYAI INTAN bertanya pada anak-anaknya)

K.ABANG             : Ma’am….. don’t be your business ! It’s useless perceive her. 

K. IJO                     : Yes ma’am beside that, our house….. full of women and also the bedrooms  have fixed !

NYAI INTAN       : Ok, Don’t make a noisy ? Your mom confuse….

                               Dear girl…..Mom gives you promise to stay here. But….You must help to do everything here, ok !

K.KUNING           : Thanks God …..! Thank you ma’am…..thank you  ( sambil mencium tangan simbok berkali2 dan klenting

                               yg lain merasa risih )

NYAI INTAN       : Yes…yes…it’s ok. by the way what is your name, dear?

K.KUNING           :  I don’t know, ma’am. ( klenting Kuning tampak bingung )

NYAI INTAN       : It’s O.K ……(tempo ) Because of Your clothes is yellow , I will give you a name…… Klenting Kuning
